Mini Eggs Buttercream

Looking for a way to use up extra Easter candy or just wanting something really indulgent? This is the perfect frosting!

Ingredients

  • 3 cups powdered sugar sifted
  • 3/4 cups butter softened
  • 1 pinch salt if using salted butter omit the salt
  • 3 tbsp heavy cream
  • 2 tsp vanilla extract
  • 4 oz cream cheese softened
  • 3/4 cups Cadbury Mini Eggs

Instructions

  • Using a stand mixer or a hand mixer and a large bowl, beat together the butter and cream cheese.
  • Add the cream, vanilla extract and pinch of salt.
  • Add the powdered sugar and mix at slow speed.
  • Keep mixing, until well combined.  
  • Increase speed and beat until smooth and whipped. Approximately 2 to 3 minute.
  • If the consistency is off, add a bit of cream if too thick or a bit of icing sugar if too thin. It's much easier to correct the consistency before adding the mini eggs.
  • Add the crushed mini eggs, and stir until incorporated.

Notes

  1. Make sure that the mini egg pieces are not too big.
