Ingredients
3cupspowdered sugarsifted
3/4cupsbutter softened
1pinchsaltif using salted butter omit the salt
3tbspheavy cream
2tspvanilla extract
4ozcream cheesesoftened
3/4cupsCadbury Mini Eggs
Instructions
Using a stand mixer or a hand mixer and a large bowl, beat together the butter and cream cheese.
Add the cream, vanilla extract and pinch of salt.
Add the powdered sugar and mix at slow speed.
Keep mixing, until well combined.
Increase speed and beat until smooth and whipped. Approximately 2 to 3 minute.
If the consistency is off, add a bit of cream if too thick or a bit of icing sugar if too thin. It's much easier to correct the consistency before adding the mini eggs.
Add the crushed mini eggs, and stir until incorporated.
Notes
Make sure that the mini egg pieces are not too big.
