Hands down Canon Seattle is the coolest bar that we have ever been to. If you are ever in the area, it’s a must.
It is located a little outside of downtown in the Seattle University area. If you are staying downtown, on a nice day it’s probably about half hour walk, but it was raining when we were there so we took an Uber.
They open at 5 pm, and we arrived just before 5 and there was a short line to get in. After a quick ID check, we were seated. The bar was full a few minutes later. The bar is small and cozy and seating is limited so you may want to consider reservations. They take online reservations for $25 each, but the credit gets applied to your bill.
As soon as you walk in you can tell this place takes cocktails seriously. They claim to have America’s largest spirits collect, having over 4,000 labels. Not that we were able to count them to confirm this number, but they definitely have more options than we have ever seen. There are shelves with bottles from floor to ceiling. When we were there the list of bottles was over 176 pages.
After taking a few minutes to look at the drink menu we ordered the Gnome Chomsky and the Death in the Carribean to start. The cocktails on their menu are all very original with names like Campfire in Georgia and Bubbles ‘n Baths. Their full menu can be found online here. Their signature cocktails are served in unique “glasses”. Glasses is in quotes because many would not be considered a glass. For example, the Gnome Chomsky is served in a copper gnome which is the cutest thing!
Before the night was out, we did order a Meat & Cheese board along with a few more drinks. Everything was excellent! Don’t know what to order? Try The Warhol it comes in a Campbell’s Tomato soup can or ask the bartenders. They are awesome! Still not your thing? The bartenders will help you find something you will like, and if you don’t they will make you something else.
