Oatmeal Butterscotch Muffins

This oatmeal butterscotch muffins recipe is my new Saturday morning favorite. There is nothing better than a lazy morning, a warm treat and a cup of coffee to start the weekend off right.

I have to admit that butterscotch is not typically a flavor that I gravitate towards. But there is something about the combination of oatmeal, cinnamon and brown sugar flavors that is just so comforting. Give these Oatmeal Butterscotch Muffins a try and let me know what you think.

Oatmeal Butterscotch Muffin Recipe

Ingredients

  • 2 cups Old fashioned oatmeal
  • 1 1/3 cups Milk Regular or Almond work well
  • 3/4 cup Brown sugar
  • 1/2 cup Melted butter
  • 2 Eggs
  • 1 tsp vanilla extract
  • 1 cup All-purpose flour
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt Omit if using salted butter
  • 2 tsp Ground cinnamon
  • 1 bag Butterscotch chips 1 bag is approximately 1.5 cups

Instructions

  • In a large bowl combine the oats, milk and brown sugar and let stand for at least 1 hour. Don't skip this step or shorten the time. If you don't, they won't turn out as well. If you know that you want to bake the muffins in the morning, you could do this step the evening before and let is set overnight.
  • Preheat the oven to 400°F.
  • Get muffin pan out. The muffin pan that I use makes 8 larger muffins or 12 regular sized muffins.
  • Mix dry ingredients (flour, baking powder, baking soda, cinnamon and salt) together in a separate bowl.
  • Add other wet ingredients (melted butter, eggs, vanilla) to the oats, milk, brown sugar mixture and combine.
  • Add the dry mixture to the wet mixture. Stir until just combined and add the butterscotch chips.
  • Make sure that your muffin pan is either greased or lined with muffin liners.
  • Scoop batter in into muffin pan and bake for about 30 minutes. Check to make sure that a toothpick inserted into the center of a muffin comes out clean.
  • Let cool a few minutes and remove muffins from pan.
  • Lastly, enjoy. They do keep pretty well in an airtight container for a few days.

Recently, I discovered that the key to a good sized and rounded top muffin is a good pan. It makes all the difference in the world. I have purchased this pan (click here) and love it. It’s a bit pricier than others but I believe it’s been worth the money.

    No instructions as to when you add butter, vanilla and eggs. They are listed as ingredients but not mentioned in instructions.

    To the author of this recipe, it would be helpful if you would make sure all the ingredients are addressed when putting this recipe together. As noted before no mention about the eggs or butter, other than in the list of ingredients.
